Here are instructions for how to fix the issue of documents attaching to emails as sharepoint links even if you tell it to attach as a document:
1) Click file in the top left and then options in the bottom left
2) Click add-ins near the bottom left of the options menu.
3)At the bottom of the addins menu it says manage, click the box that says Go to the right of manage.
4)Uncheck the box for "Adobe Document Cloud for Microsoft Outlook - Acrobat", then click okay.
